Easy Beef Popover

A tasty, easy-to-make meal is a great way to start your week. And this one is made mainly from items you probably already have on hand. A long time ago, my mother shared a “beef popover” recipe with me, and I adapted it to incorporate Manwich sauce (a family favorite). This recipe is made with a savory ground beef mixture on the bottom and a tender golden crust. The sweet and tangy sauce adds a lot of heartiness to this dish. You can choose from several varieties; my top pick is Bold.

Here’s what you need to make the popover:

1 lb. lean ground beef
2 T flour
1/4 cup chopped green pepper and/or onion
1 can Manwich Bold sauce
2 cups shredded cheddar cheese
1 c. milk
2 eggs
1 T olive oil
1 c. all purpose flour
1/2 tsp. salt

Preheat the oven to 425. Cook and crumble the beef but don’t drain. Add 2 tablespoons of flour and mix well. Add the onions/peppers and Manwich sauce. Turn up the heat and boil 1 minute. Pour into an ungreased 9×13 casserole dish. Top with cheddar cheese.

Mix the eggs, milk, oil, salt and flour in a separate bowl and spread over the top. Pop in the oven and bake 20 to 25 minutes until bubbly and golden. The crust will puff up and rise just a little.

Enjoy!

Dinner’s ready! I bet you can think of some great side dishes to pair with this hearty casserole; we enjoyed ours with toasted French bread and fresh fruit.

    I’ve never thought of having a popover/yorkshire pudding thing with meat actually baked in it rather than alongside! What a delicious idea.
