As you probably already know, I love easy and delicious slow cooker meals. This was floating around the internet and drew me in because of the savory ingredients and easy prep. We tried it for the first time today and it was a big hit – from my husband all the way down to baby Susanna. The chicken was so tender you could shred it with a fork and the combination of bacon and ranch flavors mixed into the creamy gravy were delicious!
You can serve it solo or over rice, potatoes or noodles.
Without any further fanfare, here’s the recipe:
BACON RANCH CHICKEN
1 pound boneless, skinless chicken breasts
3 T real bacon pieces or cooked and crumbled bacon
2 tsp. minced garlic
1 can cream of chicken soup
1 cup sour cream
1 pkg. ranch seasoning/dip mix
Cajun seasoning or seasoned salt
Lightly spray the inside of slow cooker with oil. Place chicken breasts in the slow cooker. Very lightly sprinkle the chicken with Cajun seasoning or seasoned salt. In a separate bowl mix bacon, garlic, soup, sour cream and dip mix. Spread over chicken. Cover and cook on low for 7-8 hours (or until desired tenderness).
NOTE: You can also lighten it up this dish with substitutions like low-sodium soup mix, low fat sour cream and omitting the seasoning/salt.
