TEX MEX CORNBREAD AND BEEF

Seasoned cornbread topped with saucy cooked beef.
Ingredients
  • 1 pound lean ground beef
  • 1 can (16 oz) Bold Manwich Sloppy Joe sauce
  • 1 tsp ground cumin
  • 2 cups self rising corn meal mix
  • ½ cup milk
  • ¼ cup oil
  • 2 eggs
  • 1 can creamed corn
  • 1 small can chopped green chiles
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 1 cup grated sharp cheddar cheese
Instructions
  1. Preheat oven to 400.
  2. In a skillet, brown ground beef until cooked thoroughly. Crumble and drain.
  3. Add Manwich and cumin, mix and heat through. Keep warm on stove top.
  4. In a large bowl, add corn meal, milk, oil, eggs, corn, chiles, spices and cheese.
  5. Pour into a 9x13 baking dish and bake for 20-25 minutes, or until toothpick comes out clean.
  6. Cut cornbread into squares and spoon beef and sauce over the top.
